Organic Vanilla beans from the Sepik and Mamose regions of the Niugini archipelago, which are Hawaiian vanilla rootstock. The beans are rich in aroma and flavour. Vanilla beans are grown in Maprik near the remote Northern Coast of Papua New Guinea by smallholder, subsistence farmers. Maprik is a province of the East Sepik and about 200km from the capital of Wewak.

The hand-pollinated flowers give yield to a tasteless, odourless green bean which is harvested after about nine months. The curing process is critical to the development of the Vanillin content which occurs as the bean changes to a dark chocolate colour. The intense aroma and vanilla character evolve during this 5 to 6-month process.
